So total honesty friends – I did not care so much for this recipe :/ It was missing something, I don’t know if it needed salt, more onions or of course more mayo is always a good option… I maybe should have tried that.

But I researched a few other Tuna Salad recipes and here are a few add-in options that others had suggested: cream of mushroom soup, milk, bread crumbs and of course more cheese is always a good option 🙂

However, I’m still going to share this recipe because even though it maybe wasn’t great the first time, doesn’t mean it won’t turn out good the 2nd time. And just because I don’t like it, doesn’t mean you won’t😏

  • 1 lb. elbow macaroni
  • 3 cans of tuna (5oz.)
  • 3 hard boiled eggs
  • 1 cup frozen peas, thawed
  • 1 small yellow onion
  • 1 cup mayonnaise
  • 1/2 cup sweet pickle relish
  • 1 tbsp. celery seed
  • 1 tbsp. lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper

  1. Cook macaroni, drain, rinse with cold water, and let cool completly.
  2. Boil your eggs, if you haven’t already.
  3. In a bowl, mix mayo, relish, celery seed, lemon juice, salt and pepper.
  4. Stir in the Tuna.
  5. Pour Mayo mixture over the cool pasta. Mix well.
  6. Add chopped eggs, onions and peas.
  7. Stir well and cool in fridge for a couple hours.
  8. Then enjoy for lunch or add as a side your burger cookout

Blessings! 😊

Strawberry Shortcake

Besides the summer strawberry pie I make, strawberry shortcake is another simple recipe I learned from my mom.

I usually always have all these ingredients in the house and it is so simple!

As summer comes to an end, give this treat a try!

Hope you have a blessed last few days of summer!

Summer Strawberry Pie

Let me be honest, I LOVE sweets!!! 😋but I don’t care for fruit pies too much, except strawberry and maybe apple. So when a coworker shared this strawberry pie 🥧 recipe years and years ago, I was stoked about how easy it was AND how good it was!!

So I know this is one recipe I had to share!

1. Pie Shell:

  • Buy an already made pie shell, I like the frozen ones 👍🏻 but if you know how to make and roll out your own pie dough more power to you….and I’m jealous!
  • 2. Strawberries
  • so I’m terrible, I don’t really know how many strawberries I use 😬, but I slice up and just fill the baked pie crust to the rim.
  • 3. For the Glaze:
  • 1 cup strawberries
  • 1/2 cup of water
  • 1 cup sugar
  • 3 T of corn starch
  • Mix strawberries, water and sugar first. Then add the cornstarch.
  • Put over the stove at medium high heat, stirring constantly, until it is thick and clear.
  • Allow to cool.
  • Pour over strawberries in crust and chill for a few hours in the fridge.
  • Then grab some cool whip and enjoy friends 🙂
  • *one side note – the last few times I made this it came out sloppy, but it still tasted amazing! Just had to use a bowl instead 😉

    Broccoli & Bacon Salad

    Hello beautiful people!

Have you ever had a time that you have to bring something to a potluck and have no idea what to bring?! So you jump on Pinterest for a few minutes or hour 🤨 get all these elaborate, awesome ideas and then can’t decide which one to do! I think that I want to do something fancy and impress everyone, but then again I don’t have much time, money or much in the house for that matter.

So this salad recipe is pretty simple (and looks fancy) and is a surprising favorite to many! And I think it is even pretty healthy too 🤔

I first tried it at a work potluck and was just trying it to be “polite” to the person who brought it and ended up loving it!

Now I bring it often and it is pretty simple to throw together! Of course, I did some tweaks to the recipe to make it even easier.

    1. 3 tsp sugar
    2. 1/2 cup of mayonnaise
    3. 2 tbsp. white vinegar
    4. 3-4 cups of Broccoli
      1. I use steamed broccoli I can put in the microwave and then quickly chop it up.
    5. 4-5 pieces of cooked bacon
      1. I cook bacon pretty often so I usually have some in the fridge. However, if I don’t I have used bacon bits before too (1/2 cup).
    6. 1/2 cup sunflower seeds
    7. 1/2 cup of raisins
    8. 1/2 cup of red onion (finely chopped)
    • Mix the sugar, mayo and vinegar, together with a wisk.
    • In a separate bowl, mix everything else.
    • Take the sugar mix and pour over the broccoli mixture.
    • Chill in refrigerator.

Bring to your next potluck Or add as a side to lunch or dinner.

    Enjoy friends 😊

    Crockpot Diced Potatoes

This is my new recipe I tried this week (#newyeargoals) 🍽!! Those of us that like potatoes, in our family, loved them! I added sour cream (which I always do with potatoes) and this would also be good with ranch or some bacon bits! But this  was a winner for us and I’ll make again

    •  About 6 yellow potatoes ( I like yellow because they are a little softer) And this time I had some big, yellow potatoes, so I only used 6, but depends on size of crockpot and who your serving)

    • 4 Tablespoons of butter

    • Seasonings – I used salt, dash of pepper and season salt

    • 2 cups of shredded cheddar cheese

Line your crockpot with aluminum foil and spray with non-stick cooking spray. Cut up potatoes to desired size and cut up butter in tablespoons. Add half potatoes, sprinkle with seasonings and some cheese. Add rest of potatoes and sprinkle  with seasonings, butter and cheese. Cook low on 8-10 hours (or high 4-6 hours). the last 10 minutes or so add the rest of the cheese.

One suggestion I would make, is that if you’re home, stir a few times. Ours were a little crispy, not burnt at all , but a little brown and crispy.

Enjoy and have a great dinner!pexels-photo-775707.jpeg

This recipe is from a friend that brought our family a huge batch when my dad was in Hospice and it was a hit! Since it was new, I am also considering it as one of New Year goals of trying a new recipe ✅

What I love about this soup recipe is that it is for the crockpot and being a working mom, I absolutely LOVE my crockpot!🥣👍🏻 Another added bonus, everyone in the family likes it (rarely happens :/ )

    • 2 cans of cream of chicken soup

    • 1 package of 90 second Chicken flavored rice ( I like the Uncle Ben’s Ready Rice Roasted Chicken)

    • 1 box of Mrs. Grass extra noodle soup (use both sides of noodles and flavoring)

    • 2 cups of chicken ( I just use 2 cans of canned, cooked chicken)

    • 2 cans of carrots

    • some onion

Put all in the crockpot, stir, add 10 cups of water and stir again. Then just wait for the yumminess of this delicious soup in 4 hours on high or most the time I use the 10 hours on low.

This is a great leftover for later in the week!

    Family Apple Crisp🍎

Apple Crisp is a fun dish that I love to do with my kids (yes, it can get messy 😋)- they peel the apples with our apple peeler and I mix in! this recipe, is again, from my mom  – family favorite – Thanks Mom! 😘

    • 1/4 cup of water

    • Cinnamon
