Summer Strawberry Pie

Let me be honest, I LOVE sweets!!! 😋but I don’t care for fruit pies too much, except strawberry and maybe apple. So when a coworker shared this strawberry pie 🥧 recipe years and years ago, I was stoked about how easy it was AND how good it was!!

So I know this is one recipe I had to share!

Ingredients:

1. Pie Shell:

  • Buy an already made pie shell, I like the frozen ones 👍🏻 but if you know how to make and roll out your own pie dough more power to you….and I’m jealous!
  • 2. Strawberries
  • so I’m terrible, I don’t really know how many strawberries I use 😬, but I slice up and just fill the baked pie crust to the rim.
  • 3. For the Glaze:
  • 1 cup strawberries
  • 1/2 cup of water
  • 1 cup sugar
  • 3 T of corn starch
  • Mix strawberries, water and sugar first. Then add the cornstarch.
  • I usually do this in a blender and this is an easy step for the kids help with.
  • Put over the stove at medium high heat, stirring constantly, until it is thick and clear.
  • Allow to cool.
  • Pour over strawberries in crust and chill for a few hours in the fridge.
  • Then grab some cool whip and enjoy friends 🙂
  • *one side note – the last few times I made this it came out sloppy, but it still tasted amazing! Just had to use a bowl instead 😉
  • Another recipe I plan on trying, but just have not had the time to try yet is this one I found on the Kraft Food and Family website.

    COOL ‘N EASY Strawberry Pie

    What You Need: 

    2 cups fresh strawberries

    divided 2/3 cup boiling water 

    1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin 

    ice cubes 1/2 cup cold water 1 tub (8 oz.)

    COOL WHIP LITE Whipped Topping, thawed 

    1 ready-to-use reduced-fat graham cracker crumb crust

    Make It:

    1 Slice 1 cup strawberries; refrigerate for later use. Chop remaining strawberries; set aside.

    2 Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.

    3 Whisk in COOL WHIP. Stir in chopped strawberries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust.

    4 Refrigerate 6 hours or until firm. Top with sliced berries just before serving.
