CROCK POT DINNER – Potatoe Soup

oh yeah, another soup 😉 I love crockpot soups because most the time you dump the ingredients and go – dump and go – and that’s all I really have time for most days. And my family’s favorite about soup night is the fresh homemade bread, which they think is a miracle I can make and honestly I remove the frozen bread dough from the freezer, place in a grease loaf pan, let it rise and bake…. shhh…don’t tell them that, I like to be thought of as a miracle worker sometimes 😉

Another thing I try to take into consideration this time of year is our families schedules – we are a basketball family so this is a busy time of year, our girls both play on 2 teams, our son is “playing” his first year (he’s 6 so you know how they “play”) and then upon that; my hubby coaches/assist 3 of the teams and this year he got hired as the freshman girls basketball coach at our school’s high school!! (Congrats hun ❤️) So we rarely eat all together and I like to have it ready so you can eat before you go to practice/game or when you come home. Otherwise if I don’t have anything prepared we eat out and then eat out again and so on….it’s a vicious cycle because it’s just so easy and convenient to run through the drive through. But my goal is stay AWAY from that!

INGREDIENTS:

  1. 30 oz bag of frozen potatoes ( I use the
  2. 1 can cream of chicken soup (10.75 oz)
  3. 28 oz Chicken Broth
  4. Chopped onion – I use about a 1/4 cup
  5. salt and pepper to taste
  6. 8 oz package of cream cheese (set out to soften)

Mix all ingredients above EXCEPT the cream cheese. Dump in crock pot, stir just to mix a little and cook on low for 8/10 hours or High for 4/6 hours. In the last 30 minutes of cooking, stir in cream cheese bar. Might have to stir this a few times after adding cream cheese. Then top with some cheddar cheese, bacon or broccoli. It is so yummy, hope you enjoy as much as our family does! It’s this is an easy win for mom 👊🏻

This recipe came from a few different versions but I think the original was From a Paula Deen recipe, thank you Miss Deen! I also found some of her corn casserole that I would love to try, maybe next time ✌️
