Chicken Tortilla Soup

Fall has arrived and that means it is time for SOUP! This used to be one of my favorites soup however with the cheese ingredients in it I can’t have it anymore (with my EOE) however I will still make for the family and I like to just dip the corner of my tortilla chips in it….I miss it! It is so good! I miss so many foods but that’s a post for another time

This soup has a lot of ingredients (well more than what I normally use), however you literally you just dump and stir. Dump all the ingredients in and stir together.

Ingredients:

  • 3 Cans Cream of Chicken
  • 2 Cans Cream of Celery
  • 2 Cans Cheddar Cheese Soup
  • 1 Can Fiesta Cheese Soup
  • 2 (15oz) Cans Chicken Broth
  • 1 (15oz) Can Diced Tomatoes
  • 1 Cup of your fav Salsa
  • 1 (4.5 oz) Can Green Chiles
  • 1 Med Onion chopped
  • 4 Cloves Garlic pressed
  • 1 tsp. Red Chili Powder
  • Salt (to taste)
  • Pepper (to taste)
  • ¼ Cup Cilantro
  • 4 Cooked Chicken Breasts (chopped or shredded)
  • 1 (or 2 )Bag Tortilla Chips
  • Shredded Cheese to top the bowl of soup

Mix ingredients(except tortilla chips and cheese) together in the crock pot. Cook low for a few hours, stirring periodically. Then serve warm with tortilla chips and cheese. It is oh so yummy and we usually have leftovers for the rest of the week, so that’s my lunch too 🙂
