Crockpot Diced Potatoes

This is my new recipe I tried this week (#newyeargoals) šŸ½!! Those of us that like potatoes, in our family,Ā loved them! I added sour cream (which I always do with potatoes)Ā and this would also be good with ranch or some bacon bits! But thisĀ  was a winner for us and I’ll make again āœ…

Ingredients:

  • Ā About 6 yellow potatoes ( I like yellow because they are a little softer) And this time I had some big, yellow potatoes, so I only used 6,Ā but depends on size of crockpot and who your serving)

  • 4 Tablespoons of butter

  • Seasonings – I used salt, dash of pepper and season salt

  • 2 cups of shredded cheddar cheese

Line your crockpot with aluminum foil and spray with non-stick cooking spray. Cut up potatoes to desired size and cut up butter in tablespoons. Add half potatoes, sprinkle with seasonings and some cheese. Add rest of potatoes and sprinkleĀ  with seasonings, butter and cheese. Cook low on 8-10 hours (or high 4-6 hours). the last 10 minutes or so add the rest of the cheese.

One suggestion I would make, is that if you’re home, stir a few times. Ours were a little crispy, not burnt at all , but a little brown andĀ crispy.
