Haystacks

img_6348These Haystacks are a Christmas tradition for our family…however this year, I didn’t quite get there, along with a lot of other things. But anyways, this is a simple, yummy treat. Downside, they can fall apart when you bite them, but I typically make mine a little bigger so maybe that’s why 😉

Ingredients:

  • 1 Tablespoon of smooth Peanut Butter

  • 1 can of Chow Mein noodles (3oz)

  • 1 cup of peanuts

  • 1 package of butterscotch morsels (6oz)

Melt the peanut butter and morsels in a heavy pan over low heat, stirring often. Continue until completely melted and remove from heat. Add noodles and peanuts to mixture until well coated. Form clusters and place on a pan, lined with tinfoil and refrigerate to harden. Makes about 20. (To make them a little festive for Christmas – before you put them in the fridge, sprinkle with green and/or red sprinkles)

(This picture is in the front of my cookbook, I made it for my mom one year in school, because it was my favorite 🙂 )
